my wife and I are looking for a good standard hotel just to chill out at the end of january .... hopefully walking distance of other bars/ restaurants etc

we are considering the LE MERIDIEN ILE MAURICE but it seems isolated

also the MERVILLE BEACH as its walking ditance to Grand baie

We have been to Merville Beach 6 times. Within walking distance to Grand Baie, 10 - 15 mins, with lots of pubs and entertainment.

If you plan to go there, try to book a superior room in the Garden court. Bit more expensive than standard room, but it is definately worth while.
Hotel staff very friendly - bar staff and boathouse crew.

Just like the poster above me, I would recommend a hotel within easy travelling distance to Grand Baie which is the tourist hub of the country with the adequate nightlife, pubs and clubs you brits are used to.

However, try take a look at this website. It's got the map of Mauritius with the hotels and restos all marked on googlemap. It might point you to the right direction.
